2017 Hiyu ‘Falcon Box’

This mind-boggling blend from winemaking artist and Master Sommelier Nate Ready lives in a parraell universe
in which the vineyards of Burgundy were still planted to field blends of every varietal to ever be produced with intent in the region. A blend of vines planted in a single, one acre parcel. Here, the Burgundian-themed plantings of the entire Pinot family, Chardonnay, Aliogte, and Melon de Bourgogne tended to like the rest of the farm’s vines: by hand with the intent to work as symbiotically as possible with nature. As a field blend of red a white varieties whose ripeness is heavily dependent upon the unique weather patterns of each vintage it can be a red, white, or rose depending on the vintage. The 2017 was vinified as a white wine, though one that has developed brassy-gold hues. Upon puling the cork, the presence of VA was readily apparent and while it slowly dissipated
with the presence of oxygen it didn’t fully blow off until midday the following day. Once open, rich aromas and flavors of spiced apple pie, red apple skin, charred limes, sea salt dazzled the senses. Supported by saline acidity and showing great length it represents a high point for todays trendy Natural Wines. A beacon towards which the producers choosing to navigate the muddy waters of a category without official recognition or well-defined definition should aim.
